Keeping It Real: Some will take today to honor those who are serving, served and those who made the ultimate sacrifice! The men and women who have served our nation with honor deserve that praise!!
The walk around us everyday with out fanfare! Some sacrificed not necessarily because they wanted to but because our nation needed them! Without some of the sacrifices, our country and world might be in a different place!
Some would say that courage means a total lack of fear! Courage in my mind, means knowing the odds, understanding the sacrifice and making the conscious decision to move forward anyway! That's COURAGE!!
I just want to send a shoutout and say thanks for serving and protecting our country! Thanks for being loyal, courageous and strong!!! Ya Dig?...

Keeping It Real: Who do I write and or start a petition to have our government attack the cell phone companies and have them TAKE AWAY texting?
This feature on the cell phones is killing folks quicker than drunk drivers, drugs & drivebys!
I know it is hazardous because my daughter constantly texts while she is driving and on a few occasions she has almost had accidents! WE almost went into a ditch other day, because I was rummaging thru my purse and she was texting & I just happened to look up IN TIME, THANK YOU FATHER, or we would have probably been a statistic!
I am on her constantly about drexting=drive & texting and I feel this is a serious matter! I want to start a petition to get texting off of cell phones!
They can ban cigarette smoking in public places because it is harmful to other people but texting is just as harmful! Ya Dig?..

Lesson Of The Day: Southern Peach Cobbler...
Keeping It Real:
For the cobbler:
1/2 cup (1 stick) of butter
1 cup of sugar
3/4 cup self-rising flour
3/4 cup of milk
For the fruit:
1 can (28 ounce) peaches in heavy syrup OR 2 cups of fresh sliced peaches
1 cup of sugar
1 cup of water
1 tablespoon cinnamon (use 1/2 in fruit and other for sprinkling on top)
1 tablespoon nutmeg
Here's what you need to do:
Preheat oven to 350 degrees F
Put the butter in a 13 x 9 x 2 inch baking dish and place in the oven until the butter melts. Remove from oven and set aside.
In a bowl, mix together the flour and sugar and stir in the milk. Batter will have a few lumps but that's okay.
Pour the batter on top of the melted butter.
If using fresh peaches, put fresh sliced peaches, sugar and water in a saucepan and bring to a boil, same with canned peaches, add spices, reduce heat and simmer for about 10 minutes.
Spoon fruit on top of batter and then slowly pour the liquid on top of that. Be careful not to mix the fruit INTO the batter. Sprinkle with cinnamon.
Bake for 35 to 45 minutes. Batter will rise to the top while baking to make an amazing crust! Ya Dig?...

Ingredients:
3 pound beef roast such as chuck roast
1 envelope of dry Italian salad dressing mix 1 envelope of dry ranch salad dressing mix
1 envelope of dry brown gravy mix
2 cups water
Instructions :
Put the water in a measuring cup that is larger then the amount of water you are using. Now add and mix all three envelopes of dry salad dressings to the water. Mix until blended completely.
Brown the roast (if desired). Add the meat to your cooker. Pour the water, salad dressing mixture over the roast. Add veggies, if you like! In the slow cooker, cook it on high for about 4 hours or low about 8 hours. Ya Dig?..

Keeping It Real: If you really want to cleanse then DRINK, DRINK, DRINK. Here are 8
home made vitamin water recipes to help you keep the water flowing!
1) The classical : lemon/cucumber:
Mix in a pitcher: 10 cups of water + 1 cucumber and a lemon, thinly sliced + 1/4 cup fresh finely chopped basil leaf + 1/3 of finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.
2) The granite : Strawberry/Lime or Raspberry/Lime
Mix in a pitcher : 10 cups of water + 6 strawberries / 0r Raspberries and one thinly sliced lime + 12 finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.
3) The digestive : Fennel/citrus
First: infuse 1 to 3 grams of dried and crushed fennel in 150 ml of boiling water for 5-10 minutes. Allow to cool.
Mix in a pitcher: 10 cups of water + lemon juice (put the leftover lemon in the mix) + a small thinly sliced orange + 12 fresh chopped mint leaves + the infusion of fennel seeds. Leave in refrigerator overnight before serving.
4) The antiOX : Blackberry/Sage
Note that a part from the berries, sage leafs is the herb that has the highest antioxidant content.
Mix in a pitcher : 10 cups of water + 1 cup of blackberries that have been very slightly crushed + 3-4 sage leaves. Leave in refrigerator overnight before serving.
5) WATERmelon : watermelon/Rosemary

Lesson of The Day: Cinnamon Roll Pie Crust

Ingredients:
1 Pillsbury® refrigerated pie crust
1 tablespoon unsalted butter, melted
2 teaspoons ground cinnamon
1 large egg white plus 1 teaspoon water, beaten
Directions:
1 Preheat oven according to directions for the pie you choose to make.
Unroll pie crust on a lightly floured surface. Brush with butter and
sprinkle evenly with cinnamon. Roll up tightly and slice into 1/2-inch
rounds, like miniature cinnamon rolls.

Lesson Of The Day: Seafood, Chicken & Andouille Sausage Gumbo...
Keeping It Real:
3 tbsp olive oil
3 tbsp olive oil
1/3 c of flour
1 red bell pepper seeded and chopped
1 celery stalk, chopped
1 medium onion chopped
1 large tomato chopped or can of diced tomatoes
4 cloves of garlic, chopped
1 tsp thyme
1/2 tsp crushed red pepper
2 tsp of hot sauce (optional) I love spicy
1 tsp of cayenne red pepper (optional)
4 cups of chicken broth, either can or boil your chicken and use the broth
1 pac of fresh okra sliced or frozen bag of sliced okra
smoked precooked andouille sausage
1 roasted, baked, rotisserie or boiled chicken (skin & bones removed)
1/2 lb of medium shrimp
1/2 lb of lobster (optional)
1/2 crabs (optional)
3 tsp of gumbo file' or as much as you like for taste
salt & pepper to taste
Cooked brown or white rice to have when gumbo is done
1. Heat oil in a large pot, add flour and cook stirring constantly
like you are making gravy or rue and make a medium brown or however dark
you like it without burning it. Stir in bell pepper, celery, onion,
tomato, garlic, thyme, crushed red pepper, cayenne pepper, salt, pepper
& hot sauce. Cook until vegetables are tender but crisp.

seafood and chicken. Let simmer until it thickens and then add gumbo

1tbsp lemon juice
1 tbsp finely minced garlic
3/4 cup heavy cream
1/2 cup grated Parmesan cheese
1 tbsp flour
In a small saucepan, melt butter. Add lemon juice and garlic and simmer for few minutes, stirring often. Whisk cream in on medium heat, do not boil, once hot, gradually add Parmesan cheese, a little at a time, until melted, stirring constantly so sauce does not separate! Add flour and continue to stir until you get to your desired consistency and use over noodles or veggies! Ya Dig?..
